Tilapia Sandwiches

20140127-185124.jpg

So tonight I was in the mood for tuna but I didn’t have tuna. But I had plenty of tilapia! Tilapia is a delicious fish and usually you can get it fresh from the market without bones. I cooked my tilapia in the oven with roasted garlic, crushed peppers and extra virgin olive oil for 35 minutes on 350 degrees. I did this to give the fish plenty of flavor prior to mashing it up to look like tuna.

From there I added avocado, red onions, egg, mayo and string beans. It’s delicious and there’s plenty extra if you cook at least 3 tilapias. For more healthy recipes follow us on Facebook.

20140121-204243.jpg

Lucky me. I’m not allergic to almonds . So I can drink almond milk . It just so happens my brother loves almond milk. This milk comes with great health benefits. It has 50% more calcium than diary milk. The dairy is gluten and soy free. It’s only 60 calories per serving. It’s an excellent source of vitamins and minerals as well ( vitamin A, vitamin B12, vitamin D2, vitamin E, and Rinoflavin)! Thoughts on Kale and Spinach Pasta

20140121-172737.jpg

So I tried out the kale and spinach pasta a day ago. I tossed it with extra virgin olive oil , cheese and crushed peppers. I recommend adding a sauce with this meal as I thought something was missing. Don’t get me wrong, it’s healthy and the pasta has a great texture but I need a little kick to my meals. I never missed salt and toppings as much as I do now since I’ve removed it pretty much out of my diet. Still need to get use to it.

Today I made fresh orange juice and I eat Greek yogurt and a berries with granola everyday now. I am crossing my figures that I lose a good amount of weight in the month of February.

Superfood: Spinach & Kale Ravioli

20140118-142133.jpg

I am getting closer to 1 month of eating healthier meals. I can’t wait to eat this superfood of spinach & kale ravioli. It’s nutrient- packed with kale, spinach and gourmet cheeses. The wrapping is spinach dough. It’s a superfood because it’s an excellent source of calcium and antioxidant vitamins A & C. It’s 100% natural too. Ask your local grocery store if they carry Pasta Prima or you can make homemade spinach and kale ravioli. For more healthy super foods, follow us on Facebook.com .

For dinner tonight I broiled pork chops for 25 minutes on 500( seasoned with chipotle pepper flakes before popping in the oven). As the pork chops broiled, I simmered the Blue Berry Sauce. The sauce includes spiced wine, berries, a little lemon juice and cinnamon.

Homemade oven baked fries

If you love crunching on fries, you’ll love the idea that you can enjoy fries without sacrificing delicious or wasting away a healthy diet.

I made homemade oven baked fries for dinner. No salt. I sliced 4 potatoes into wedges. Next, I coated the potatoes with olive oil that featured roasted garlic powder, chipotle flakes and peppers. Then I placed my potato wedges on a cooking pan. Preheat the oven to 450 degrees. Bake the fries for 45 minutes. Enjoy!
